Portugal is a nation where meals are more than nourishment, they are rituals of togetherness. At the centre of this tradition is the cataplana, a unique piece of cookware that embodies both culinary heritage and social connection and at Four Seasons Fairways, guests are invited to experience this cultural cornerstone first-hand.
The cataplana, traditionally used to prepare fragrant seafood stews, is a symbol of Portugal's Algarve region. Shaped like a clamshell, it seals in flavour and aroma, producing dishes that are rich, wholesome and designed to be shared. But beyond its function, the cataplana is about gathering and an excuse for families and friends to convene around the table, chatting, sipping wine and savouring meals that often stretch for hours.
Four Seasons Fairways embraces this ethos of communal dining. Villas are equipped with kitchens and outdoor BBQ areas, perfect for preparing and sharing meals. For those who prefer to be served, Amara offers refined regional dishes in a warm, elegant setting, while VIVO delivers fresh, family-friendly fare in a relaxed environment. At Amara, the menu brings modern flair to traditional Portuguese ingredients. Guests can enjoy dishes such as Sardine Ganache, Topinambur Soup, Crab Risotto, Seared Saddle of Lamb and Raspberry and Tarragon Pavlova. Vivo, on the other hand, caters to casual dining with flavour-packed options like grilled piri-piri chicken, seafood linguine and a beautifully prepared seafood cataplana for two on their popular weekly Algarvian Night. Both restaurants highlight the joy of eating together, whether it's a laid-back lunch or a celebratory evening meal.
“Our menus and dining spaces have been thoughtfully created to bring people together,” says Chef Nelson Candeias. “Whether guests are enjoying a relaxed lunch at Vivo or an elegant dinner at Amara, the experience is always centred around connection - sharing stories, flavours, and memorable moments.”
Venturing out? The Algarve is dotted with exceptional local dining experiences. Estaminé on the Ilha Deserta, 2 Passos on Ancão beach, and Casa do Lago are just a few of the standout options that showcase the region's seafood tradition and love of long, lingering lunches.
At Four Seasons Fairways, guests discover that meals are more than moments of consumption, they are celebrations of connection, culture, family and bringing people together.
